Mediterranean Potato Salad

Taste the flavours of the Mediterranean without leaving home!

4    Potatoes, cubed and boiled
1    Red onion, chopped
2    Ontario greenhouse tomatoes, chopped
1    Ontario greenhouse pepper, chopped
1    Can chickpeas, drained
4    Tbsp lemon or lime juice
¼    Cup fresh parsley, chopped
2    Cloves garlic, chopped finely
½    Tsp EACH coriander and cumin
¼    Tsp EACH salt, sugar and cayenne pepper
   
Combine all ingredients, and refrigerate at least 1 hour.
