Tuscan Bread Salad

A quick, light salad that the kids love to make too.

3    EACH Ontario greenhouse red and yellow tomatoes, cut into ½” cubes
1    Medium red onion, cut into ¼” slices
1    Ontario greenhouse cucumber, cut into ½” cubes
2    Cups day-old crusty bread, cut into ½” cubes
½    Cup extra virgin olive oil
¼    Cup red wine vinegar
¼    Cup fresh basil, torn
2    Tbsp fresh chopped oregano
      Salt and pepper to taste
   
In a large bowl, combine tomatoes, onion, cucumber and bread. Toss. In another bowl, whisk together oil and vinegar. Pour over bread mixture and toss again. Gently mix in basil and oregano, and season to taste with salt and pepper. Let stand 10 minutes before serving. Makes 6 servings.
