Tomato Mushroom Topper

Looking for something to wake up your baked potato? Try this super easy recipe! 

In a small amount of oil, microwave 4 cups of sliced mushrooms on High for 3 minutes. Stir in 2 cups EACH of chopped, seeded Ontario greenhouse tomatoes and sour cream.

Microwave, uncovered, on medium until heated through. Add salt and pepper to taste.

Spoon over hot, split, baked potatoes. This recipe is equally good on whole grain bread/crackers or your favourite noodle.
