Tomato Cup Cucumber Salad
Looking for that "perfect" dish to impress your party guests? This is a wonderful do-ahead recipe and works well with a wide variety of food.
3 Ontario greenhouse tomatoes, halved
1 Ontario greenhouse cucumber, diced
1 Medium onion, chopped
½ Cup chopped parsley
½ Cup crumbled feta cheese
2 Tbsp lemon juice
½ Tsp EACH salt, oregano, basil
¼ Tsp pepper
1/3 Cup vegetable oil
Spinach leaves
Scoop pulp from centre of tomato halves. Place upside down on paper towels to drain.
In a large bowl, combine cucumber, onion, parsley and cheese. Chill for 1 hour. Whisk together lemon juice and season. Slowly whisk in oil.
At serving time, arrange spinach leaves on 6 individual plates. Pour ½ of the dressing over the vegetables and toss. Fill tomato shells with cucumber mixture and place on spinach. Drizzle remaining dressing over spinach. Refrigerate any remaining salad and serve the next day.
