Tomato Cucumber Vinaigrette Salad

It doesn't get tastier or easier than this!!
3 Tbsp olive oil2 Tbsp white wine vinegar
1 Clove garlic, minced
1 Tsp salt
¼ Tsp black pepper
4 Ontario greenhouse tomatoes, cut into chunks
1 Ontario greenhouse cucumber, cut into chunks
¼ Cup sliced green onions
¼ Cup chopped parsley
In a small jar, combine oil, vinegar, garlic, salt and pepper. Cover and shake well. Let stand for at least 1 hour.
In large bowl, combine tomatoes, cucumber, green onion and parsley. Pour dressing over all and toss to coat.
