Tomato Basil And Bocconcini Salad

This dish is so easy to make, yet it's elegant and delicious. 

2     Ontario greenhouse tomatoes, sliced ½” thick
8     Fresh basil leaves
4     Oz. bocconcini cheese, drained and sliced ½” thick
¼    Cup olive oil
4     Tsp balsamic vinegar
      Salt and pepper to taste
   
On a platter, arrange a layer of tomato slices. Top with sliced cheese and a basil leaf. Just before serving, drizzle with oil and vinegar. Salt and pepper to taste.
