Tomato And Black Bean Salad

Delicious and nutritious. This salad makes a good sandwich wrap too!

Salad
   
1    Cup dried black beans
4    Ontario greenhouse tomatoes, seeded and diced
1    Small onion, diced
2    Stalks celery, sliced
¼    Cup chopped fresh coriander
   
Rinse beans, cover with cold water and soak overnight. Drain. In large microwaveable casserole, combine beans with 3 ½ cups water. Cover and cook on HIGH for 45 minutes. Let stand, covered until cooled. Drain. Add tomatoes, onion, celery and coriander. Toss with dressing. Cover and chill for about 2 hours. Can be prepared a day in advance. Makes 4 servings.
   
Dressing
   
¼      Cup olive oil
2      Tbsp red wine vinegar
1      Clove garlic, crushed
1      Tsp salt
½     Tsp EACH pepper and sugar
        Hot pepper sauce

Whisk ingredients together and toss with salad.
