Thai Pickled Cucumber And Tomato Salad

Your family and friends will be amazed when you serve this salad. 

1     Ontario greenhouse cucumber, sliced into 1/8” pieces
1     Ontario greenhouse tomato, sliced thinly
½    Cup rice vinegar
1     Tbsp packed brown sugar
¼    Tsp salt
1     Hot pepper, seeded and thinly sliced
¼    Cup red onion, chopped finely
1     Tbsp chopped fresh coriander
       Lettuce leaves
   
Place cucumber slices in a heat-proof bowl.

In a small sauce pan, stir together vinegar, sugar and salt. Add hot pepper and bring to a boil. Reduce heat and simmer for 2 minutes. Pour over the cucumber slices, toss to coat, cover and refrigerate up to 6 hours.

Just before serving, stir in onion. With a slotted spoon, place cucumber on lettuce-lined platter. Arrange tomato slices on the cucumber and sprinkle with coriander.
