Spinach Supper Salad

This makes a wonderful warm weather meal, packed full of nutritious foods. 

8      Hard cooked eggs, cut into quarters
¼     Cup sugar
¼     Cup water
¼     Cup white wine vinegar
¼     Tsp dry mustard
10    Oz fresh spinach, torn into bite-sized pieces
8      Oz fresh mushrooms, sliced
2      Celery stalks, sliced
2      Ontario greenhouse tomatoes, cut into wedges
1      Ontario greenhouse cucumber, sliced
1      Lb cooked, diced chicken
2      eggs
   
In a microwave-safe bowl, beat the 2 eggs with sugar and water. Microwave on high for 1 minutes, whisking halfway through. Stir in vinegar, mustard, salt and pepper to taste. Microwave on high for another 1 minute, whisking halfway through. Mixture should be creamy and thickened.  Set aside.

Toss spinach, mushrooms, celery, tomatoes and cucumber. Divide among 8 serving plates. Top with chicken, and hard cooked egg wedges. When serving, drizzle with warm dressing.
