Oriental Pita Triangles

Looking for a new idea for lunch? For home, work, school or on the go this is a tasty and versatile recipe to try.

¼      Cup olive oil
3       Tbsp balsamic vinegar
1       Tsp Dijon mustard
1       Clove garlic, crushed
¼      Tsp sugar
2       Ontario greenhouse tomatoes, thickly sliced
1       Medium red onion, thinly sliced
12     Slices Italian-style bread
12     Slices mozzarella cheese
        Salt and pepper
        Fresh parsley, chopped
   
In a bowl, whisk together oil, vinegar, mustard, garlic and sugar. Add salt and pepper. Add tomatoes and onion. Let stand at room temperature for 30 minutes. Drain off marinade.

Broil bread slices for 1-2 minutes per side until golden brown. Top with cheese and broil until cheese melts and bubbles. Divide tomatoes and oil mixture among slices. Sprinkle with parsley and serve immediately.
