Ontario Greenhouse Growers' Salad

When you grow the best greenhouse vegetables on earth, it just makes sense that you know how to eat them!

6      Ontario greenhouse tomatoes, cut into wedges
1      Spanish onion, cut into thin wedges
1      Ontario greenhouse pepper, diced
1      Ontario greenhouse cucumber, cut in 1/2 lengthwise, then sliced thinly
1/4   Cup fresh basil, torn
1/4   Cup fresh parsley, torn
        Fresh garlic, crushed (optional)
        Salt and pepper to taste
        Oil
        Vinegar

Toss the vegetables and herbs together. Salt and pepper to taste. Drizzle your favourite vinegar over the top of the salad. Toss. Drizzle the oil over the top of the salad. Toss. Adjust vinegar and oil as desired. Enjoy!
