Bacon & Tomato Soup

When food is a perfect combination, there are infinite ways to prepare it!

5       Ontario Greenhouse tomatoes, peeled, seeded and chopped
1/2    Lb. bacon, chopped coarsely
1       head of garlic, chopped
1       Onion, chopped
2       Leeks, cleaned and chopped
1       small zucchini, chopped coarsely
6       cups vegetable or chicken broth
2       tbsp extra virgin olive oil
Pinch    each - parsley, thyme, rosemary, nutmeg
       Salt and pepper to taste

Gently brown the onion, leeks and garlic in olive oil. Add the rest of the ingredients, and simmer for 30 minutes on low heat.
