Mustard Glazed Tomatoes

Sound unusual? It is! Delicious? No doubt about it!
1 Tsp EACH salt and dried thyme
2 Tbsp EACH brown sugar and Dijon mustard
2 Tbsp butter
2 Tbsp chopped parsley
Cut a thin slice from the top of each tomato and discard. Using a spoon, hollow out the tops of each tomato (approx. 1” deep). Place tomato cut side up in a lightly greased baking dish.
Sprinkle each tomato with salt and thyme. Stir together brown sugar and mustard. Spread mixture evenly on top of each tomato. Dot each with butter.
Bake, uncovered, in a 350 F oven for about 30 minutes. Sprinkle with parsley.
