Marinated Cucumber Salad

A perfect do-ahead dish that will make you shine at the ever-so-popular Pot Luck Parties! 

1      Ontario greenhouse cucumber, cut into 1” julienne strips
2      Carrots, cut into 1” julienne strips
10    Medium mushrooms, sliced
1      Medium onion, halved and sliced
¼     Cup white wine vinegar
1      Tsp sugar
½     Tsp EACH salt and dried tarragon
¼     Tsp crushed red pepper flakes
2      Bay leaves, crumbled
   
In a shallow glass pan, combine cucumber, carrots, mushrooms and onions. In a small sauce pan, combine vinegar, sugar and seasonings. Heat until hot, but not boiling. Pour over vegetables and toss well.

Cover and marinate in refrigerator overnight.
