Asian Cucumber Salad

1      Ontario greenhouse cucumber, sliced very thinly
1/4   Cup white vinegar
2      Tbsp sugar
1      Tbsp water
2      Tsp soy sauce
1/4   Tsp ginger root, finely grated
        Fresh parsley, chopped

Place cucumber slices in a bowl. Blend together vinegar, sugar, water, soy sauce and ginger. Pour over cucumber slices, mixing to coat evenly. Chill for 15 minutes and then drain well. Squeeze cucumber slices dry. Serve with a parsley garnish.
