Jamaican Salad

This recipe has a unique and distinct flavour that kids love.
1 Head romaine lettuce, in bite sized pieces1 Papaya, peeled, seeded, halved and cut in strips (reserve seeds)
1 Avocado, sliced
2 Ontario greenhouse tomatoes, cut in wedges
1 Ontario greenhouse cucumber, cut into 2” strips
¼ Lb snow peas, blanched
¼ Cup white wine vinegar
1 Tbsp honey
1 Tsp Dijon mustard
1 Clove garlic
½ Cup vegetable oil
Arrange papaya, avocado, tomatoes, cucumber and snow peas decoratively on lettuce.
In blender, combine vinegar, honey, mustard and garlic. While blending, gradually add oil. Continue blending until smooth. Add 2 tbsp papaya seeds and process until seeds are chopped to the texture of coarsely ground pepper.
Drizzle over salad and serve immediately.
