Grilled Tomato Sandwich Italiano

A perfect feel-good-on-a-rainy-day recipe. 

4    Slices Italian bread
1    Clove garlic
1    Pkg mozzarella cheese slices
2    Large Ontario greenhouse tomatoes, sliced
      Soft butter
      Pesto sauce
      Grated parmesan cheese
      Salt and pepper
   
Arrange bread on a baking sheet and place 5-7” under a preheated broiler until lightly toasted on both sides. Cut garlic clove in half and rub over one side of each piece of toasted bread. Butter same side of toasted bread. Arrange mozzarella slices over toast and return to broiler until cheese starts to melt. Top each with a slice of tomato and spread a little pesto sauce on top. Sprinkle with parmesan cheese, salt and pepper and broil until hot and bubbly. Serve immediately.
