Green Veggies With Rosy Mayonnaise

Any and all green vegetables will work with this healthy dish. Actually, all vegetables will work with this dish.

2        Ontario greenhouse tomatoes
1/2     Cup mayonnaise
1/4     Cup sour cream or yogurt
1        Green onion, chopped
1/4     Tsp EACH salt and dill weed
          Pinch White pepper
          Lettuce

Asparagus, green beans or broccoli, cooked and cooled.

Remove a slice from the top of each tomato. Core and scoop out pulp (reserve the pulp). In a blender, puree the tomato pulp, add mayonnaise, sour cream, green onion and seasoning. Blend until smooth. Cover and refrigerate.

At serving time, arrange tomato shells on a bed of lettuce. Fill with the tomato mixture. Arrange green vegetables around tomato shells. Serve with extra dressing. Makes 4 servings.
