Greek Chicken Salad

Want a new idea for leftover chicken? Here's one that is sure to please.

1-1/2    Lbs cooked chicken, cubed
3          Pita breads, cut into 2” pieces
1          Ontario greenhouse cucumber, cut into chunks
3          Ontario greenhouse tomatoes, cut into chunks
1          Romaine lettuce, torn
½         Lb feta cheese, broken into 1” pieces
4          Green onions, sliced
½         Cup black olives, pitted.

Bake pita bread in a 350 F oven for 5 minutes.  When slightly cooled, toss with all the above ingredients.  Add dressing and toss.
   
Dressing
   
2    Tbsp lemon juice
2    Tbsp red wine vinegar
1    Tsp salt
½    Tsp EACH pepper and thyme
¼    Cup olive oil
¼    Cup parsley, chopped
2    Tbsp fresh mint, chopped
   
Whisk ingredients together well, and toss into salad.
