Greek Bean Pitas
As a rule, we don't eat enough beans in our diet. This wonderful recipe will change that.
1-1/2 Cups cooked mixed coloured beans (or white pea beans)
1-1/2 Cups Ontario greenhouse cucumber, diced
1 Cup Ontario greenhouse tomato, seeded and diced
½ Cup Ontario greenhouse pepper, diced
½ Cup feta cheese, crumbled
1/3 Cup red onion, diced
¼ Cup black olives, chopped
2 Tbsp red wine vinegar
1-1/2 Tsp oregano
¼ Tsp EACH salt and pepper
6 Pitas
Lettuce leaves
In a bowl, combine all ingredients except for the pitas and the lettuce. Place lettuce on top of flat pita. Spoon filling in the middle. Roll up the pita, and wrap the bottom of the sandwich with wax paper.
Serve with tzatziki sauce or any one of your other favourites.
