Gazpacho Soup

Simple, elegant, nutritious. What more could you ask of a recipe?
3 Large Ontario greenhouse tomatoes, chopped
1 Large Ontario greenhouse cucumber, cubed
3 Green onions, sliced
½ Medium Ontario greenhouse pepper, chopped
¼ Cup parsley, chopped
1 Cup tomato juice
2 Tbsp olive oil
1 ½ Tbsp red wine vinegar
1 Clove garlic, crushed
½ Tsp EACH salt and ground cumin
¼ Tsp hot pepper sauce
Pinch of black pepper
In a large bowl, combine tomatoes, cucumber, onions, chopped pepper and parsley. Whisk together tomato juice, oil, vinegar, garlic and seasonings. Pour over tomato mixture and stir gently. Cover and refrigerate for at least 30 minutes. Makes 4 servings.
