Gazpacho And Pasta Salad

Try this nice pasta salad on your next picnic, at the beach, or at your next party.
1 Cup uncooked shell pasta3 Large Ontario greenhouse tomatoes, chopped
1 Ontario greenhouse cucumber, cubed
½ Cup black olives, sliced
3 Green onions, sliced
½ Medium Ontario greenhouse pepper, chopped
¼ Cup parsley, chopped
In a large amount of boiling water, cook paste per package directions. Drain well. Let cool.
In a large bowl, combine cooled pasta, tomatoes, cucumber, black olives, green onions, pepper and parsley. Pour salad dressing over top, cover and refrigerate for at least 30 minutes. Serve on leaf lettuce. Makes 10 cups.
Dressing for Gazpacho Salad
¼ Cup olive oil
3 Tbsp red wine vinegar
2 Cloves garlic, crushed
1 Tsp salt
1 Tsp ground cumin
½ Tsp hot pepper sauce
¼ Tsp black pepper
Whisk together all above ingredients and pour over gazpacho salad.
