Garden Creamy Cucumber Soup

A perfect side to spicy foods, or as a warm weather lunch.

Microwave 4 cups of chopped Ontario greenhouse cucumber with 4 cups of chicken broth on high for 10 minutes. Season with dried tarragon, salt and pepper.

Puree in blender until smooth and refrigerate until cooled. Whisk in 1 cup of sour cream and 1/2 cup mayonnaise. Serve chilled, garnished with cucumber slice(s). Makes 8 servings.
