Fried Tomatoes

Tomatoes don't have to green to be enjoyed fried.
3 Large Ontario greenhouse tomatoes
½ Cup yellow corn meal
1 Tbsp brown sugar, packed
1 Tsp salt
¼ Tsp ground black pepper
Vegetable oil
Cut each tomato into 3” thick slices.
Combine corn meal, brown sugar, salt and pepper.
Coat both sides of tomato slices in corn meal mixture. Heat oil in a large fry pan. Fry tomato slices in oil over medium high heat until golden brown on both sides. Add more oil as needed. Serve immediately.
