Dilly Cucumber Pasta Salad

Add a can of tuna or salmon to this salad and you have a delicious light lunch.
2-1/2 Cups spiral shaped pasta, cooked, drained and set aside1 Ontario greenhouse cucumber, shredded to make 1-1/2 cups-keep remaining cucumber
1 Cup sour cream
1/3 Cup mayonnaise
1 Tbsp EACH green onion & parsley, finely chopped
2 Tsp dried dillweed
1 Tsp season salt
½ Cup shredded carrot
Salt and pepper to taste
Squeeze shredded cucumber to remove excess moisture. Combine with sour cream, mayonnaise, onion, parsley and seasonings, and mix well. Pour cucumber mixture over pasta, add carrot and mix well. Add salt and pepper to taste. Cover and refrigerate for 1-2 hours before serving.
Thinly slice remaining cucumber. Line edge of serving plate with sliced cucumber. Spoon pasta salad into center of plate.
