Curried Chicken Salad In Cucumber Cups

Try this - you'll love it! Perfect for leftover chicken.
2 Tsp Madras curry paste
2 Cups cooked chicken, diced
¾ Cup seedless green grapes, halved or quartered
2 Tsp fresh mint, chopped
1 Tsp fresh chives, chopped
1 Ontario greenhouse cucumber, cut into ½” slices
Salt and pepper
In a medium bowl, combine curry paste and mayonnaise. Gently stir in chicken, grapes, mint and chives. Season with salt and pepper.
With a spoon or melon baler, make a small well in the center of each cucumber slice. Fill with the curry chicken salad.
Garnish with a mint leaf and serve.
