Cucumber Wild Rice Salad

Wild rice in combination with Ontario greenhouse vegetables makes this zesty salad a favourite. 

1 ½    Cups water
1/3    Cup wild rice, uncooked
1       Ontario greenhouse cucumber, diced
1       Large Ontario greenhouse tomato, diced
2       Green onions, chopped
½      Cup sliced radish
2       Tbsp red wine vinegar
½      Tsp EACH salt and oregano
¼      Tsp pepper
2       Drops hot pepper sauce
2       Cloves garlic, chopped
¼      Cup vegetable oil
½      Cup watercress
   
In a small sauce pan, bring water to a boil. Add rice, cover, reduce heat and simmer for 25-30 minutes or until rice is tender. Drain.

In large bowl, combine cucumber, tomato, onions, radish and wild rice.

In a small bowl, blend vinegar, seasoning and garlic. Slowly whisk in the oil.

Pour dressing over salad and toss. Garnish with watercress. Makes 4 servings.
