Cucumber Salad, Lebanese Style

This is super-easy to make, and delicious to eat. 

Salad

2       Ontario greenhouse cucumbers cut into 2” lengths and slivered
1       Ontario greenhouse red pepper, halved and cut into strips
4       Green onions, cut into 1” lengths
1/4    Cup chopped parsley
2       Tbsp chopped fresh mint (or 2 tsp dried mint)
         Leaf lettuce

Combine all ingredients except lettuce in a large bowl. Toss with dressing and chill for at least 30 minutes. Serve on leaf lettuce. Makes 6-8 servings.

Dressing

1/4    Cup balsamic vinegar
1/4    Cup olive oil
2       Cloves garlic, crushed
1/4    Tsp salt
         Pinch pepper

Whisk all ingredients together until thoroughly mixed. Toss with salad vegetables.
