Cream Of Cucumber Soup

You will love this new twist on soup. Try it - your family will eat it up!
2 Tbsp butter1 ½ Cups chopped onions
1 ½ Ontario greenhouse cucumbers, cubed
2 Medium potatoes, peeled and cubed
2 Cups chicken broth
½ Cup cream or milk
Salt and pepper to taste
In large sauce pan, melt butter and sauté onions until tender. Add cucumbers, potatoes and chicken broth. Bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes. Place part of the mixture in a blender and process until smooth. Stir in cream. Add salt and pepper to taste. Add back to sauce pan and re-heat. Makes about 5 servings.
