Carmelized Tomato And Onion Appetizer
Let the kids try this pizza recipe out for themselves. It's as fun to make as it is to eat.
2 Onions, thinly sliced
2 Tbsp olive oil
2 Tbsp balsamic vinegar
1 Tbsp honey or brown sugar
4 Pizza crusts, baked (or pita bread)
2 Ontario greenhouse tomatoes, seeded and diced
2 Cups shredded mozzarella cheese
Grated parmesan cheese
Chopped fresh parsley
Salt and pepper
In a large non-stick frying pan, sauté onions in oil over medium high heat until softened. Reduce heat to low and simmer, uncovered, for 20 minutes. Stir frequently. Blend in vinegar and honey and simmer another 1 minute. Season to taste with salt and pepper.
Divide mixture among pizza crusts and spread evenly. Combine tomatoes and mozzarella cheese. Sprinkle over onion mixture. Top with parmesan cheese.
Bake at 350 F for 10-15 minutes or until cheese is melted. Sprinkle with parsley.
