Calzones

The beautiful thing about this sandwich recipe is that you can substitute anything you have on-hand.

1       Lb frozen bread dough, thawed
2       Large Ontario greenhouse tomatoes, chopped and seeded
1       Cup shredded mozzarella cheese
1/3    Cup chopped salami
2       Tbsp grated parmesan cheese
1       Egg yolk
1       Tsp dried basil
   
Divide dough in ½. Roll each ½ with lightly floured rolling pin to 20” x 10” rectangles. Cut each into two 10” squares.

In a bowl, combine tomatoes, mozzarella cheese, salami, parmesan cheese, egg yolk and dried basil. Divide mixture evenly over squares. Fold dough over to enclose mixture, pressing firmly to make triangles and seal edges. Bake at 425oF for about 15 minutes. Makes 4 servings.
