Bruschetta Quesadilla

A perfect snack for those hungry kids when they get home from school.

1    Pkg flour tortillas
4    Cups shredded Monterey Jack cheese
5    Medium Ontario greenhouse tomatoes, chopped
3    Medium cloves garlic, minced
¾    Cup chopped cilantro
1    Tbsp chili powder
   
   
Place a flour tortilla on double thickness of paper towels and microwave on high for 1 minute each. When cooled, tortillas will be crisp.

Combine shredded cheese, tomato, garlic, cilantro and chili powder. Cover and store in refrigerator.

At serving time, place a spoonful on each tortilla and microwave on high for 35-40 seconds.
