Updated Salmon Salad

A perfect lunch dish.
    
3       Cans flaked salmon
2       Eggs, hard boiled and chopped
1       Ontario greenhouse red pepper, chopped finely
1       Ontario greenhouse cucumber, chopped
4       Ontario greenhouse yellow peppers
1       Small red onion, chopped
¼       Cup mayonnaise
¼       tsp lemon pepper
1/2    Lemon, juiced
         Salt and pepper to taste
    
Remove the tops from the yellow peppers, and remove seeds and pith. Set aside.

In a large bowl, combine all remaining ingredients and gently toss until mixed.

Spoon salmon salad into the hollowed out yellow peppers. Chill for 15 minutes. Serve and enjoy.
