Better Bean Salad

This easy recipe is packed full of taste, vitamins and minerals.
    
1    Ontario greenhouse yellow pepper, chopped
1    Ontario greenhouse red pepper, chopped
2    Ontario greenhouse tomatoes, chopped
1    Can kidney beans, drained and rinsed (15 oz)
3    Tbsp balsamic vinegar
1    Tbsp soy sauce
1    Tsp honey
1    Tsp dried basil
3    Cloves garlic, chopped
2    Tbsp fresh parsley, chopped
    
In a small bowl, whisk together the vinegar, soy sauce, honey, basil, garlic and parsley. Set aside.

In a large bowl, combine the yellow peppers, red peppers, tomatoes and beans. Pour the dressing over top, toss gently, cover and refrigerate for at least 1 hour.
