Asian Cucumber Quinoa Salad

This dish is similar to couscous, but why not try something new!
½ Cup quinoa*
1 Cup water
1 Ontario greenhouse cucumber, chopped
1 Ontario greenhouse tomato, chopped
½ Ontario greenhouse red pepper, thinly sliced
¼ Cup pine nuts, toasted
¼ Cup chopped green onions
2 Tbsp EACH soy sauce, sesame oil, rice vinegar
1 Tsp liquid honey
1 Tsp ginger root, finely grated
In a sauce pan, bring quinoa and water to a boil. Cover and reduce the heat. Simmer for 15 minutes. Transfer to a large bowl and let cool.
Add cucumber, tomato, red pepper, pine nuts, onions, soy sauce, sesame oil, vinegar, honey and ginger. Toss to combine.
*Quinoa is a nutritious grain grown in South America.
