Tomato & Onion Sauce

This sauce has as many uses as you can think up!
    
1     Pint Ontario greenhouse cherry tomatoes
1     Red onion, chopped finely
½    Tsp crushed red pepper flakes
1     Tbsp balsamic vinegar
3     Cloves garlic, crushed
¼    Tsp oregano
1     Tsp sugar
       Salt and pepper to taste
    
In a sauce pan over medium heat, combine all ingredients. Cook for 20 minutes. Break up the tomatoes and cook for 30 minutes more. Cool, cover and refrigerate until ready to use.
