Roll-Ups

Refreshing and delicious. A perfect dish for pot luck gatherings!
1 Ontario greenhouse cucumber
1 Ontario greenhouse yellow pepper, seeded and cut in strips
1 Ontario greenhouse tomato, seeded and cut into wedges
2 Packages cream cheese, room temperature
4 Tbsp mustard
2 tsp dill weed
1 Lb deli meat (ham or assorted – anything you like)
Prepare the cucumber by cutting it in half across, then in half lengthwise. Cut 4 spears from each quarter.
In a bowl, combine the cheese, mustard and dill. Spread 1-2 tbsp over each slice of deli meat. Place 1 piece of vegetable across the bottom of the meat and roll up tightly. Wrap tightly in plastic wrap and refrigerate for at least 2 hours. When chilled, slice into 1” pieces.
