Tomato Patties

Bring something tasty and unusual to the table!
    
6-8    Ontario greenhouse tomatoes, peeled
1       Small onion, chopped
30     Crackers, crushed
3       Tbsp vegetable oil
         Salt and pepper to taste
    
In a bowl, mash or finely chop the tomatoes, with the juice. Add onion, crackers, and salt & pepper. Mix well and set aside for at least 15 minutes.

Heat the vegetable oil in a skillet over medium heat. Shape the tomato mixture into patties and fry them until golden brown on both sides.
