Broiled Sandwiches

If your children won’t eat their vegetables, try this sandwich. It works.
    
2    Ontario greenhouse tomatoes, seeded and chopped
1    Ontario greenhouse red pepper, seeded and chopped
1    Ontario greenhouse yellow pepper, seeded and chopped
1    Onion, chopped
6    Slices of cheese (any kind you have)
6    Slices of bread
2    Tsp olive oil
1    Tsp oregano
    
Preheat the broiler to 350 F.

In a bowl, toss the tomatoes, peppers, onions, oregano and olive oil. Set aside.

Place the slices of bread on a baking sheet under the broiler and broil until lightly toasted. Turn the bread over and place a ¼ - ½ cup of the vegetable mixture on top. Spread gently to cover bread and place slice of cheese on top. Return to the broiler until the cheese has melted and starts to brown. Serve immediately.
