Bruschetta Stuffed Chicken Breasts
Ooohh, so good!
4 Ontario greenhouse tomatoes, chopped
2 Ontario greenhouse peppers, chopped
4 Green onions, chopped
3 Cloves garlic, chopped
1 Tbsp olive oil
3 Tbsp fresh basil, chopped
1 ½ Cups shredded mozzarella cheese
8 Chicken breasts, boneless and skinless
Place the chicken breasts in plastic wrap, and lightly pound until ¼” thick. Set aside.
In a bowl, mix tomatoes, peppers, onions, garlic, shredded cheese, and basil.
Spoon equal amounts of mixture onto the chicken breasts. Roll the breasts up as tightly as possible. Place chicken breasts, seam side down in a baking dish. Drizzle the olive oil over the top. Bake at 350 F for 45 minutes.
