Mediterranean Bread Salad

A refreshing taste that takes you to the Mediterranean!
1 Ontario greenhouse pepper, chopped
1 Ontario greenhouse cucumber, chopped
2 Ontario greenhouse tomatoes, chopped
½ Cup frozen, chopped spinach, thawed and drained of water
2 Tbsp fresh mint, chopped
¼ Cup green onions, chopped
2 Lemons – squeeze the juice out
¼ Cup of your favourite vinaigrette
2 Cups stale bread, cubed
Mix the peppers, cucumbers, tomatoes, spinach, mint and green onion in a bowl. Squeeze in lemon juice and stir. Drizzle in your favourite vinaigrette and stir. Toss in the bread cubes and stir until well mixed. Let stand 1 hour before serving.
