Pineapple Shrimp Salad

1         Lb cooked shrimp, shells off
1         Small red onion, halved and thinly sliced
1         Ontario greenhouse red pepper, cut in thin strips
2         Tbsp fresh basil, chopped
2         Tbsp fresh coriander, chopped
¼        Cup roasted peanuts, coarsely crushed
2         Tbsp lime juice
2         Tbsp sugar
1         Tsp salt
2         Cans pineapple chunks, drained
Pinch    Red pepper flakes
    
In a bowl, mix red onion, Ontario greenhouse red pepper, basil, coriander, peanuts, lime juice, salt and sugar until well combined. Add pineapple chunks and gently toss. Add cooked shrimp and gently toss. Garnish with red pepper flakes.
