Ontario Greenhouse Tomato Soup

Easy, healthy, tasty!
8-10 Ontario greenhouse tomatoes, chopped
1 Onion, chopped
2 Cloves garlic, chopped
1 Tbsp butter
½ Tsp EACH salt and pepper
2 Tbsp corn starch
1/3 Cup sour cream
In a saucepan over medium heat, melt butter and add onion, garlic, salt and pepper. Cook approximately 5 minutes until softened. Add tomatoes and bring to a boil. Reduce heat and simmer for 15-20 minutes, stirring occasionally.
Transfer tomato mixture to a blender or food processor (you may have to do this part in batches). Blend until smooth. Return tomato mixture to pan and bring back to a boil over medium heat. In a cup, mix the corn starch with 2 tbsp water. Whisk this slurry into the tomato mixture and stir until thickened. Add in the sour cream and whisk until smooth.
