Spicy Sweet Potato & Red Pepper Cornbread

1     Sweet potato, cooked, mashed and set aside
2     Eggs, slightly beaten
¾    Cup milk
¼    Cup vegetable oil
1    Cup flour
1    Cup corn meal
1    Tbsp baking powder
1    Tsp EACH salt and baking soda
½    Tsp red pepper flakes
½    Cup Ontario greenhouse red peppers, chopped finely
    
Place mashed sweet potato in a bowl and add milk, oil and eggs. Whisk together until smooth.

In a separate bowl, combine the dry ingredients. Stir in the sweet red Ontario greenhouse pepper and the mashed sweet potato mixture.

Spread in a greased baking pan, and bake at 400 F for 20-25 minutes. Let cool before serving.
