Grilled Veggies With Sweet Pepper Vinaigrette

2 Zucchini, sliced
1 Eggplant, sliced
4 Tbsp extra virgin olive oil
½ Ontario greenhouse red pepper, chopped finely
½ Ontario greenhouse yellow pepper, chopped finely
1 Clove garlic, chopped
2 Tbsp balsamic vinegar
½ Tsp sugar
2 Tsp dried oregano
Salt and pepper to taste
Brush the zucchini and eggplant with 1 tbsp of the olive oil and season with salt and pepper. Grill until browned, but still firm. Remove from grill and allow to cool. Arrange on platter.
Whisk together the remaining ingredients. Spoon over the zucchini and eggplant. Let stand 15 minutes before serving.
