Ribbon Salad

It's not only pretty, it's pretty easy!!

6      Ontario greenhouse tomatoes
3      Ontario greenhouse cucumbers
3      Green onions
¼     Cup olive oil
3      Tbsp red wine vinegar
½     Tsp dried basil
¼     Tsp EACH oregano and marjoram
½     Tsp sugar
        Pinch salt and pepper
   
Seed and chop tomatoes. Thinly slice the onions.

In a large bowl, whisk together the oil, vinegar and seasonings. Add the tomatoes and onions. Mix gently, but thoroughly. Set aside at room temperature while you prepare the cucumber ribbons.

Cut cucumbers in half lengthwise. Using a veggie peeler, peel lengthwise (start on the inside so you have the green peel as the edge) down the cucumber to create the “ribbons”.

Arrange “nests” of cucumber ribbon on individual plates. Spoon drained tomato, onion vinaigrette into the middle of each nest.
