Vegetable Medley

A wonderful vegetable dish that can be served over rice, pasta or mashed potatoes, or as a side dish for meats, fish or poultry.

6     Ontario greenhouse tomatoes, cut in chunks
½    Ontario greenhouse red pepper, cut in chunks
½    Ontario greenhouse yellow or orange pepper, cut in chunks
1     onion, cut in chunks
2     cloves garlic, crushed
½    lb fresh whole okra, washed
1     bay leaf
½    tsp thyme
¼    tsp chili powder
3     tbsp olive oil
      Salt & pepper to taste

Heat the oil in a frying pan over medium high heat. Add onion and garlic and cook for 2-3 minutes. Add the whole okra, tomatoes, peppers, and seasonings. Lower heat to medium, cover pan and simmer for 20-25 minutes. Add water if needed to keep vegetable mixture moist.
