Greenhouse Veggie & Fennel Salad

Unusual and delicious! This simple recipe is packed with flavour!
Dressing
6 tbsp extra virgin olive oil
4 tbsp wine vinegar
2 cloves garlic, finely chopped
1 tsp dry dried mint
Salt & pepper to taste
2 medium fennel bulbs, sliced thinly
2 small onions, sliced thinly
½ Ontario greenhouse cucumber, sliced thinly
1 Ontario greenhouse sweet pepper (red, yellow or orange), sliced thinly
2 Ontario greenhouse tomatoes, cut into wedges
Your favourite lettuce
Toss the dressing ingredients into a large bowl and whisk together. Add all the veggies except the lettuce. Mix gently until coated well.
Arrange the lettuce on a platter, and spoon the salad veggies on top. Done!
