Vegetable & Bean Soup

When time is tight, but you want to put something good and healthy on the table, try this wonderful soup.

4    Ontario greenhouse tomatoes, chopped
1    Onion, chopped
2    Carrots, chopped
2    Celery stalks, chopped
2    Cloves garlic, chopped
2    Tbsp olive oil
4    Cups chicken stock
1    Can navy beans, drained and rinsed
      Salt and pepper to taste
      Fresh basil leaves, coarsely chopped
   
In a pot, heat oil on medium high and brown onion and garlic. Add carrots and celery. Sauté until tender. Add chicken stock, tomatoes, beans and seasonings. Bring to a boil, reduce heat and simmer 15-20 minutes. Stir in fresh basil, and serve.
