Stuffed Peppers, Mexican Style

Colourful and delicious. Perfect for entertaining.

1       Tbsp vegetable oil
6       Green onions, chopped
2       Ontario greenhouse tomatoes, seeded and chopped
2       Ontario greenhouse yellow peppers, tops cut off and seeded
2       Ontario greenhouse red peppers, tops cut off and seeded
1       Ontario greenhouse orange pepper, seeded and chopped
1       Can corn
1/3    Cup chopped nuts
2       Tbsp fresh basil, chopped
1       Cup mozzarella cheese, shredded
½       Tsp cumin
         Salt and pepper to taste
   
In a skillet, heat oil and saute green onions. Add tomatoes, corn, orange pepper, nuts, basil and salt and pepper. Cook for 1-2 minutes stirring. Add cheese and mix thoroughly.

Stuff mixture into the 4 Ontario greenhouse peppers. Place in a baking dish, cover with foil and bake at 350 F for 20-30 minutes.
